Shrimp Bread

I love this recipe. Give it a try. I doubled the recipe, because I bought a larger loaf of bread. Enjoy.

INGREDIENTS:

2 cups of peeled shrimp
1 loaf French bread
1/2 stick butter
1/2 cup onions, chopped
1/2 cup celery, chopped
1/4 cup red bell pepper, chopped
1 tbsp garlic, minced
1/2 tsp dry mustard
1/2 cup mayonnaise
1/3 cup mozzarella cheese
1/3 cup cheddar cheese

METHOD:
Cut top off of French bread. Scoop inside out of loaf and set aside. In a large skillet, melt butter and cook onions, celery, bell pepper, garlic and shrimp for 15 minutes. Add dry mustard and mayonnaise. Mix all together, then mix in all cheeses and blend until melted. Put shrimp mixture into bread. Butter top and wrap in foil. Bake on barbecue pit or in 350°F oven for about 20–30 minutes. Cut into slices and serve.

Note: May substitute crawfish for shrimp.

Black Beans and Corn w/ Tasso..Bacon Wrapped Beef Smokies

I was craving tasso, so I decided to just throw something together.  I added some butter and cooked the tasso.  I added a can of Rotel, Corn, Black Beans, Garlic and of course "Slap Ya Mama".  I then added chicken stock, heavy cream.  After it cooked for a few, a cup of rice was added.  It wasn't bad, but not great.  Oh well, it was food.  Think next time I will try chicken enchiladas.













I cooked up a little appetizer.  I grabbed some beef lil smokies, wrapped in bacon and seasoned with my BBQ rub.  Cooked until the bacon was crisp, then added to BBQ sauce in a crockpot.

Awesome Christmas Cookies

These are some awesome cookie recipes....enjoy.

White Chocolate Cranberry Cookies

3/4 Cup Butter, Softened
3/4 Cup Packed Light Brown Sugar
1/2 Cup Granulated Sugar
2 TSP Vanilla
1 TSP Almond Extract
1 Egg
1 3/4 Cups All Purpose Flour
1/2 TSP Baking Soda
1/4 TSP Salt
1 Cup White Vanilla Baking Chips
1 Cup Sweetened Dried Cranberries

Heat oven to 350.  In a large bowl, beat butter, brown sugar, granulated sugar, vanilla, almond extract and egg with electric mixer on medium speed until well mixed.  Stir in flour, baking soda, and salt.  Stir in baking chips and cranberries.

On ungreased cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart.

Bake 12 to 15 minutes or until light brown.  Cool 2 to 3 minutes; remove from cookie sheet to cooling rack.







Mint Chocolate Chip Cookies

1 Pouch (1lb 1.5 oz) Betty Crocker Sugar Cookie Mix
1/2 Cup Butter or Margarine, softened
1/4 to 1/2 TSP Mint Extract
6 to 8 Drops Green Food Color
1 Egg
1 Cup Creme De Menthe Baking Chips
1 Cup Semisweet Chocolate Chunks

Heat oven to 350.  In large bowl, stir cookie mix, butter, mint extract, food color and egg until soft dough forms.  Stir in baking chips and chocoloate chunks.

Using small cookie scoop or teaspoon, drop dough 2 inches apart on ungreased cookie sheet.

Bake 8 to 10 minutes or until set.  Cool 3 minutes; remove from cookie sheet to cooling rack.  Store cookies tightly covered at room temperature.
