Boudin Balls and Bacon Wrapped Gator Sausage Bites

Well I was down to my last pack of boudin, so I went with the ole classic...Boudin Balls.  Miss being in Louisiana and finding boudin balls in most convenient stores and gas stations. 


I remove the boudin from the cases, add a little cheese and form into balls.
Roll the balls in flour, then egg and bread crumbs.
Deep fry until golden brown.
I like to dip mine in remoulade sauce and others cover in nacho cheese.








What would be a week without bacon wrapped something.  I had some Alligator Sausage, dusted in BBQ rub and wrapped in bacon.
